8 pm - Sit down for dinner
1130pm - Dinner to be completed
12pm - Champagne Toast and Ball Drop
1am - VC Closes

Lobster BLT salad
Canadian lobster tail, arugula and fennel, tomato concasse, pancetta crisp, lobster vinaigrette, crispy tarragon

Lobster bisque
chive creme fraiche, Tuscan fettunta, pancetta crisp

Raviolo
Ricotta and tallegio, beef cheeks, braised shallots, king oyster mushrooms, natural jus
