About the Event

The balance between creativity and technical execution when it comes to both winemaking and food is fragile at best. Very early on in the life of the restaurant, I realized that what set the wines of Pearl Morissette apart from other producers was not so much their technical execution, but the passion behind them.     A balanced and stable wine can be inspiring and even exemplary but does little to stir emotion. You need that touch of poetry and artistry to produce something really great. A good winemaker is always part scientist, part philosopher, part poet, part time-traveller, part alchemist...  A similar thing can be said about the food at RPM. Balanced flavours and perfectly cooked dishes are nothing without an inspired ingredient, like sweetgrass from the garden or locally foraged autumn olives.  You can always sense the hand of the winemaker or chef at Pearl Morissette, their sensibility, their whimsy, their craftsmanship, and their passion, all intermingling.  As a celebration of our continued relationship with the Vintage Conservatory, RPM has designed a special menu to pair with not one, but TWO unreleased wines. Sourdough Bread Flood Fife, Dark Rye and Spelt Buttermilk Whipped Butter East Coast Sea Salt N.S. Lobster Green Radish, Lobster Mayo, Tomato and Habanada Vinaigrette Roasted Beets White, Golden and Red Beets from Cookstown Green, Preserved Plums, and Pecans Hay Roasted Celeriac Burnt Onion Crumble, Tatsoi, and Caviar Cream Pasture-raised Lamb Turnips, Potato, Rutabaga, and Sweet Cicely Black Koji Tart  Whipped Sweetgrass Cream, Black Koji Custard, and Candied Hazelnuts Choux au Craquelin Peach Leaf Pastry Cream and Blackberry Jam *The menu is chilled for transport and will require some minor preparation.  **Please email dietary restrictions to restaurant@pearlmorissette.com and we will let you know if we are able to accommodate your request.  ***Menu subject to change.

The Wine

2018 Pearl Morissette Fougue (Chardonnay)

The second vintage of our Fougue is here and allowing us to explore a Chardonnay of distinctly different character than the Dix-Neuvieme. Supple and lush, yet translucent and pulsing with vibrant energy, weaving through an unmistakable combination of rich fruit and firm salinity that we've come to know from our Home Farm vineyard. This is a wine that will readily give ample pleasure now but has many years ahead of its life.  2018 Pearl Morissette Racine du Ciel (Cabernet Franc) Have you ever had a wine that’s equal parts fire and water, earth and air? This is a Cabernet Franc that has them all and exists on the horizon where cobalt waters meet a purple sky; and where air is bronzed and sweetened by fiery sunsets. The invitingly-dark bouquet has the richness and depth of dark chocolate along the enchanting and relaxing smells of shaded woods and forest streams. Smooth and dense with the luxurious taste of black cherries on the palate, yet gliding with the grace and power of aurora borealis tongues licking the night.
